I have made a few tasty dishes and will add them to my blog shortly.
Tonight, I made the Pot-Roast Meatloaf. There are a few steps involved, but overall it was very simple and quick to make. It took about 45 minutes, although it could be done in less. My one mistake is that the recipe calls for 2 x 14 oz
cans of diced tomatoes. Being the "attention to detail" girl that I am, I bought
and used 2 x 28 oz cans of diced tomatoes. Thus the bacon did not crisp up as it
should have and the meatloaf did not brown. It was however, the best meatloaf I have had so far. The smoked paprika has a great presence and the consistancy of the loaf is excellent. There is nothing worse than a soggy hunk of meat. It would have been nice to get a crunch of bacon, had I followed the recipe properly. I would have also used a bit more chili pepper for a stronger bite. I would make this again any day. It was a hit with my hungry man and even my 12 year old "lil' sis", Breanna, loved it. It would work great as leftovers, the tomato sauce would keep it from drying out. It does not lack in flavour either.
